10 lbs Watermelon Rind, skinned and cubed
1 pkg. Lily Lime (calcium hydroxide, usp)
8 lbs. Sugar
1/2 gal. Vinegar
2 T. mixed pickling spice
1/2 c. salt

Directions:
Directions:
Soak rind in lime overnight and drain. Cover with water, add 1/2 c. salt and boil 20 min. Drain. Add sugar, vinegar and spices and cook 60 min.
Pack and seal in sterilized hot jars and lids.
