3 lb Rib Eye Roast or Eye Round
Coarse Ground Pepper
2 T. Butter
3 T. Oil
4 T. Brandy

Directions:
Directions:
Shape roast, you may want to tie it to preserve its shape, season well with pepper. Heat butter and oil in flameproof baking pan and sear meat quickly to brown the surface. Heat brandy and flame, pouring over meat and shaking pan. Roast in hot oven 425º for 10 min. and reduce heat to 375 for 25 min. Roast should be medium rare. Serve hot or cold with horseradish and rolls. Can be sliced thin for party buffet.
