1 cup quinoa
2 cups water or chicken broth
1 jar Sundried tomatoes, NOT in oil
1/2 cup pine nuts
1/4 cup red onion
3 tbsp olive oil

Directions:
Directions:
Simmer quinoa for twenty minutes in water or chicken broth
Sauté red onion in olive oil, when tender add pine nuts and Sundried tomatoes
Quinoa should absorb all liquid, if not, drain and then add sautéed mixture. Serve warm or cold.
