Ingredients: Pasta dough:
4 cups flour 1/2 teaspoon salt 5 eggs 1/4 cup warm water 1 Tablespoon olive oil
Ravioli filling:
2 cups cooked chicken breast, chopped 1 egg 1/2 cup Parmesan cheese, grated 1 Tbsp. parsley, minced 1 cup pistachios (pinion nuts would be a good substitute), minced 1 cup green chile, minced

Directions:Pasta: On a cutting board, sift dry ingredients and make a well in the center. Add the eggs, water and olive oil. Mix with your hands (adding flour if needed) until you are able to fold the dough and roll it into a ball (about 10 minutes). Cover it and let it rest about 1 hour. Divide into 4 balls and roll out until thin, in a rectangular shape (or cut with round cookie cutter for circular shape).
Place a spoonful of filling (amount depends on the size of ravioli you want). Moisten the areas around the filling (or edges if circular) with water and lay a thin sheet of pasta on top (or a round "top" if circular). If rectangular, cut into squares around filling. Let rest for five minutes, then drop into salted boiling water and cook about 3 minutes or until tender.
Serve with sauce of your choice. A cream sauce with green chile works well.
Filling: Mince each dry filling ingredient separately in a food processor until finely minced. Mix all dry ingredients in bowl and add a beaten egg. Filling can be made ahead and refrigerated overnight. |
