• 4 pieces puff pastry, cut slightly larger than salmon
• 4 pieces salmon
• ¼ cup pesto
• ¼ cup sliced almonds
• 2 tomatoes, sliced

Directions:
Directions:
Preheat oven to 400º. On parchment paper, place the 4 pieces of pastry on sheet. Place 4 pieces of salmon next to, but not touching, the pastries. Sprinkle 1 tbsp almonds over each piece of salmon. Bake for 10 minutes. To serve, place pastry on plate, top with pesto, slice of tomato, and top with salmon.
