• 4 potatoes, peeled
• 6 eggs
• 2 tbsp oil
• 1 red onion, chopped
• Baby spinach
• Cheddar cheese

Directions:
Directions:
Cook potatoes in boiling water. Drain and cut into small slices. In another bowl, beat eggs, add salt & pepper. In a saucepan, cook onion; add spinach and potato and simmer for a few minutes. While on low-medium heat, pour in eggs but do not break up mixture. Cook for approximately 3 minutes or bake in oven at 400º for about 10-15 minutes. Cover with cheese, allow it to melt.
