1 1/2 rice
3 cups scalded milk
1 cup sugar
3 lbs ricotta
1 8 oz cream cheese
2 1/2 cups sugar (one for rice mixture and 1 1/2 for ricotta mixture)
1/2 tsp baking powder
2 tsp vanilla
2 T lemon juice
2 T orange juice
1 tsp lemon rind
1 tsp orange rind
8 - 9 eggs

Directions:
>Cook rice, drain,and set aside to cool.
>Add scalded milk, 1 cup sugar to rice and boil for 5 minutes- cool.
>Beat until smooth-ricotta, cream cheese, 1 1/2 cup sugar, baking powder, vanilla, lemon juice, orange juice, lemon and orange rinds.
>Add eggs one at a time and beat into ricotta mixture.
>Fold in rice.
>Pour in prepared crust.
>Bake at 350º for 45- 70 minutes or at 425º for 15 minutes and lower to 350º for 45-60 minutes.
