G'ma Rita's Stuffing Recipe

1 14 oz. bag sage & onion Brownberry stuffing
1 good size apple
2 stalks celery
1/2 average size onion
1 pkg. pork sausage (bulk)
1 egg
parsley & sage

Directions:
Directions:
Simmer giblets and neck in water (about 6 cups) with 1 stick of margarine for about 1 hour. Remove giblets and neck and save water for later.

Fry pork sausage until cooked, but not brown. Grind apple, celery, onion, cooked giblets and pork sausage. Rita always used a meat grinder by hand. Since I don't have one, I use a food processor.

Add mixture to stuffing and use leftover water from cooking meat to moisten the stuffing. Use plenty if you like it moist. Add the egg, a little parsley and sage. Mix well.

Fill turkey cavity (loose, not packed) and tie legs together. Put leftover stuffing in a casserole dish and bake.

I requested this recipe from Rita in 1990 and treasure the handwritten copy to this day. Although Rita says there is no "real" recipe for her stuffing, it always turns out perfect every time she makes it! It is my favorite dish on Turkey Day and Craig agrees, it would not be Thanksgiving without Mom's stuffing!
