1/3 cup dill, chopped finely
1/3 cup parsley, finely chopped
2-inch leek, chopped finely
2 pieces celery and tops, finely chopped
2 thick slices fresh tomato, chopped
2 cloves garlic, crushed
½ cup scallions and/or onion, finely chopped
¼ green pepper, finely chopped
1¼ cups oil (vegetable or olive)
¼ cup mild or wine vinegar
Paprika
Accent
Salt
Pepper

Directions:
Combine vegetables, herbs, and spices with oil and vinegar. Allow to sit at room temperature overnight. Refrigerate after 24 hours.

This recipe originated from Lois Morgan who specially formulated it for Franny Markunas. Lois and her husband owned a bed and breakfast in Bucks County before they moved to Hillside Road. She was a fabulous cook and she was ahead of her time with trends. She passed away in 2005.
