1 cup white stone ground grits (not instant grits)
2 tablespoons butter
2 cups heavy cream
2 1/2 cups shrimp stock (see note)
2 teaspoons Old Bay Seasoning (divided)
1/2 teaspoon salt
1/4 cup roasted diced green chile (peeled and seeded)
8 oz. shredded sharp cheddar cheese
6 slices thick bacon (fried and crumbled)
5 scallions (green part sliced thin)
1 tablespoon fresh chopped cilantro
2 tablespoons dried crushed green chile (hydrated in 1/2 cup warm water)
1 clove garlic, chopped
2 tablespoons olive oil
1 lb. raw shrimp (in shells 26-30 count)

Peel and devein the shrimp, remove the tails and set the shrimp aside.

Note Shrimp Stock: Put the shrimp shells along with 3 cups of water, 1 teaspoon of Old Bay Seasoning and 1/2 teaspoon of salt in a 2-quart sauce pan. Bring the water to a boil, reduce heat to low and simmer for 30 minutes. Strain the liquid and shells through cheese cloth/fine sieve to make the shrimp stock. Save for the grits.

For the grits:

In a 3-qt. sauce pan add the shrimp stock, heavy cream, and butter. Bring to a medium boil and whisk in the grits; reduce the heat to low and stir occasionally. Cook on low for 25-30 minutes or until done; stir the grits and fold in the cheese and chopped green chile.

For the Shrimp:

In a large sauce pan (12-inch) add 1-1/2 cups water, olive oil, garlic, hydrated green chile, the Old Bay seasoning. Bring to a boil over medium-high heat. Add the shrimp and stir the shrimp constantly until the shrimp turns white in color and just firms up; approximately 3 minutes. Do not overcook the shrimp as they will get tough!
