4 eggs
1 lb. powdered sugar
1 tsp. lemon extract
1 tsp. anise extract
1 tsp. anise seed
1 lb. sifted flour, or more (approximately 3 1/4 c)
1 tsp. baking powder (heaping)
1/4 tsp. salt

Directions:
Directions:
Beat eggs about 20 minutes or until light and fluffy
Add powdered sugar gradually
Add remaining ingredients
Mix and knead well into soft dough
Chill dough about 2 hours
Roll out in portions of about 7 1/2 x 9 1/2 inches each
Then print with springerle rolling pin or board
Cut apart and place on waxed paper overnight

Preheat oven to 350º

Place on well greased cookie sheet
Before putting on sheet, wet the bottom of each one with a wet cloth or wet paper towel.
Bake for 9 minutes or longer - just until slightly brownish. Serves 5 doz.
