1 whole grain baguette, thinly sliced
1 small round of brie cheese, sliced
2 cups strawberries, sliced
1/2 cup green onions, chopped
2 tablespoons jalapeño pepper, seeded and minced
1/4 cup fresh mint, chopped
2 tablespoons cilantro, chopped
1 teaspoon grated lime zest
2 tablespoons lime juice
2 tablespoons balsamic vinegar
1/2 teaspoon coarse salt
1/2 teaspoon ground black pepper

Directions:

Preheat oven to 425 °F (220 °C).

Combine all salsa ingredients and let stand at room temperature.

Meanwhile, top baguette slices with slices of the Brie cheese and a teaspoon of the salsa. Place on a cookie sheet. Bake 5-10 min, or until bread is crispy and cheese melted.

Remove from oven, top each canapé with a small leaf of fresh mint.

Serve warm or cold.


** the left over salsa is great with a bowl of nacho chips!

The cheese in this recipe can be substituted - I have tried smoked Gouda, Camembert and Brie - all went very well with the strawberry salsa.
