4 roasted and peeled green chilies
3 green zucchini or yellow squash
2 roasted tomatoes
1 roasted ear of corn
1 clove garlic
1 shallot
3-4 oz shredded cheese, your choice (preferably a Jack or softer cheese)
Salt and pepper to taste
2 tablespoons cooking oil, preferably an olive oil
Sauce pan or large fry pan

Directions:

Cut zucchini or squash into 1" cubes. Dice green chilies into small pieces. Dice shallot and garlic. Remove corn from ear. Remove peel and core from tomatoes.

In a pan, get oil to medium/medium-high heat and saute shallots and garlic for 2-3 minutes. Add zucchini and cook for 10-15 minutes or to desired tenderness. Add green chilies, tomatoes, and corn, season to taste and let cook for another 3-5 minutes. Add cheese before serving.

Enjoy with steak, chicken, fish, tofu, or any protein. Can be vegan by eliminating cheese or substituting with vegan cheese.
