4 lbs. russet potatoes
1/2 lb. bacon fried, drained and crumbled
1 lb. Biad chopped Heritage green chile
1 cup chopped red onion
1/2 cup mayonnaise
1/2 cup chopped cilantro
Salt and pepper to taste

Directions:
Directions:
Peel the potatoes and cut into 1/2-inch chunks. Cover with salted water and bring to a boil simmering until just tender. Drain and add remaining ingredients mixing thoroughly. Serve warm.

All amounts can be adjusted to taste. Try it with celery, bell pepper, diced sharp cheddar cheese, and substitute parsley for cilantro or omit altogether.
