1 lb. ground beef or turkey
1 onion - diced
13 oz. diced green chile
1 28 oz. can chopped tomatoes
8 oz. wide egg-noodles
1 tablespoon Worcestershire sauce
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
Olive oil or cooking spray
2 cups grated cheese of choice (sharp cheddar or a 4 cheese blend)

Preheat the oven to 350 degrees.

In a skillet, brown the ground beef and drain the excess fat.

Add the onion and cook until tender, (4-5 minutes).

Add the green chile, tomatoes (with juice), Worcestershire sauce, basil, salt, and pepper and mix.

Bring mixture to a boil and then simmer for 15 minutes.

Cook egg noodles until tender in boiling salted water, about 6 minutes. Drain the water from the noodles and add the tomato mixture over the noodles and gently mix.

Place the tomato/noodle mixture into a baking dish coated with olive oil or cooking spray. Cover the top with cheese.

Bake for 15 minutes or until the cheese is melted.

Makes 6 servings.
