2 lbs. ground turkey
2 cups Panko bread crumbs
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1 medium onion, diced
2 tablespoons chopped fresh Italian parsley
2 teaspoon kosher salt
1 egg
1 tablespoon olive oil
1 tablespoon flour
1/2 cup chicken stock
3 cloves garlic
3 cups diced green chile (roasted, peeled, and de-seeded)
1/2 cup chopped tomato, fresh or canned
1/2 teaspoon cumin
1 bag of shredded cheese mix

Directions:
Preheat oven to 350 degrees F.

In a bowl mix together the turkey, Panko bread crumbs, 1/2 of the diced onion,1 cup green chile, egg, chile powder, thyme, Italian parsley, cayenne, 1 1/2 teaspoon salt and black pepper. Mix with hands until all ingredients are combined. Transfer the mixture to a baking sheet lined with aluminum foil and arrange mixture into two equal sized loafs. Bake for about 1 hour or until a thermometer registers 160 degrees F.

Green Chile Sauce:

Heat the oil and saute 1/2 of the diced onion for two to three minutes, then add one clove of the minced garlic and cook until softened. Stir in the flour and cook for two minutes. Add the stock, 2 cups of green chile, tomatoes, and cumin. Cover and simmer for thirty minutes, occasionally stirring. Add additional stock if sauce gets too thick. Salt to taste.

When the meatloaf is fully cooked, pour the green chile sauce over the loaves and sprinkle cheese mix as desired. Put back in oven for 5 minutes or until cheese has melted. Top off with chopped green onions. Allow loaves to rest for 10 minutes before slicing.
