Ingredients: 1 pound ground beef 97% or higher 1 package of egg roll wrappers 1 cup vegetable oil (or enough to coat in frying pan) 1 small yellow onion (chopped into small cubes) 7 green full roasted green chilies (chopped) 2 cups shredded mozzarella cheese 1 beaten egg in a separate bowl Garlic powder, salt, pepper to taste

Directions:Brown ground beef in frying pan, adding garlic powder, salt and pepper to desired taste. Add chopped onion and green chile. Saute until onions are golden brown. Drain excess oil from meat mixture. Heat another frying pan with the 1 cup of oil on medium.
Separate egg roll wrappers and place on clean dry surface in a diamond shape. Fill each wrapper with 1/4 cup of meat mixture in the middle and add a handful of mozzarella cheese on top.
To wrap: Take bottom corner and fold over mixture. Take top corner and folder mixture. Fold both sides towards the middle.
To seal egg roll to prevent it falling apart while frying and not allowing oil to get inside mixture: Dip fingers into beaten egg mixture and seal the edges of the egg wrapper where the seams come together. Place 3-4 egg rolls in the oiled frying pan at a time. Fry 3-4 minutes on each side or until wrapper is golden brown. Pat dry with paper towel to ease excess oil.
