2 tbsp. olive oil
1/4 lb pancetta, bacon or salt pork
1 yellow onion chopped
2 pinches of red pepper flakes
1 garlic clove, minced
1/2 large head of cabbage, sliced, about 1 1/2 lb
1/4 cup water
dash of salt

Directions:
Directions:
1) Cook bacon and onion over medium heat in a large saucepan or skillet. Remove some of the fat if desired. Add chili flakes and garlic, cook 1 additional minute.

2) Add the cabbage, water and salt. Reduce to low heat, cover and cook stirring occasionally, until cabbage is tender and browned, about 30 minutes. Add more water as needed so cabbage does not stick. Serve hot.
