1 c. sifted all-purpose flour
2 tbsp. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. yellow cornmeal
1 egg, beaten
1/4 c. salad oil
1 c. milk

Directions:
Directions:
Preheat oven to 425º F. Grease an 8X8X3 inch baking pan (or 12-muffin tin). Whisk flour with sugar, baking powder, and salt. Add cornmeal, mixing well. Set aside.

In medium bowl, combine egg, salad oil, and milk, mixing well. Add flour mixture, stirring only until flour mixture is moistened.

Spoon batter into prepared pan; bake 20-25 minutes, or until golden brown. For muffins, bake 15-20 minutes.

This is a lighter, sweet cornbread. Sugar can be increased to 3 tbsp. Do not use for cornbread stuffing - it will become gummy.
