1/2 pint heavy whipping cream
3 tbsp. sugar

Keep whipping cream cold in fridge until just before use. Pour into bowl and beat on low-medium with electric mixer for a minute or so, then turn to high, moving beaters around as much as possible to add air to cream. Add sugar in thirds, continuously beating cream, until you can form soft peaks with the cream. Serve.

This makes enough for one pie; you can whip a whole pint of whipping cream, using 6 tbsp. sugar, if more whipped cream is needed.
