6 - 8 hardboiled eggs
3 tablespoons sour cream
2½ teaspoons prepared mustard
¼ teaspoons salt
Sauce:
4 tablespoons butter
1 cup sour cream
1/3 cup chopped onions
1 can mushroom soup
½ cup chopped mushrooms
½ cup shredded cheese
paprika

Directions:
Directions:
Slice eggs lengthwise, remove yolks. Mix yolks with sour cream, mustard and salt. Fill the egg whites. Sauce: Melt butter in large skillet, sauté onions and mushrooms until tender. Remove from heat, stir in soup and sour cream. Put eggs in 1 ½ quart shallow baking dish. Pour sauce over eggs, sprinkle with cheese and paprika. Bake in 350 degrees for 25 minutes. Can be made ahead. If you double the number of eggs, do not double the sauce.
