1/4 c. vegetable or canola oil
1-1 1/4 c. long-grained rice
1 14-oz. can diced or crushed tomatoes
2 c. chicken stock or chicken bouillon
1/2 tsp. garlic powder
1/2 tsp. cumin
1/2 tsp. salt
Dash cayenne or chili powder
Dash black pepper

Use a large frying pan with lid. Pour in oil. Heat oil to very hot. Add 1¼ cup long-grained raw rice. The oil should cover the rice completely. Stir continuously until rice turns a golden brown. Remove from heat. Drain oil well. Add tomatoes, and chicken bouillon. Add spices as desired. You can also add cilantro if you like that. Bring to a boil, cover and simmer on low for about 15-20 minutes, or until rice is fluffy and no liquid remains. Serves 6-8.
