2-3 cloves fresh garlic, minced
1 ½ tsp. salt
1/3-1/2 c. red wine vinegar or Balsamic vinegar
2/3 c. canola oil

Directions:
Directions:
In a mortar and pestle, pour salt over minced garlic and pulverize with pestle for one minute or so. (The salt acts as a pumice.) Pour in vinegar, then oil (should be a 1:2 proportion), and stir with spoon, scraping all pulverized salt-garlic mixture from the sides. Pour into a jar, cover tightly with lid, and shake to mix. The dressing should be shaken or stirred before every use. Refrigerate between uses.

(I have never measured these ingredients – just do it by sight. I use more salt than you think you should – it helps to pulverize and it’s a secret of the taste. Red wine or balsamic vinegar should not be substituted for any other type. I have also added ground tarragon leaves to the garlic and salt before pulverizing. It’s optional.)
