1 1/4 c. crushed buttery crackers
1/4 c. butter or marg. melted
1 1/2 lbs peeled & deveined med. shrimp
1/3 c. minced green pepper
1/3 c. minced sweet red pepper
1/4 c. minced onion
1 lg clove garlic minced
3 T butter or marg. melted
2 (8oz) pkg cream cheese softened
1/2 c. mayonnaise
4 lg eggs
1/3 c. milk
1 1/4 c grated gruyere or swiss cheese
1 t. ground white pepper
italian tomato sauce

Combine cracker crumbs & 1/4 c. butter; press evenly onto bottom of 9 inch springform pan. Set aside. Peel, devein and chop shrimp. Cook shrimp & next 4 ingredients in 3 T. butter in large skillet over med. heat, stirring constantly, 4 - 5 min. or til shrimp are done & vegetables are tender. Drain well, set aside. Beat cream cheese & mayo at high speed til creamy; add eggs, one at a time, beating after each addition. Add milk gradually at low speed. Stir in shrimp mix, cheese and white pepper. Pour mix in prepared pan. Bake at 300º for 1 hour 20 min. or til set. Turn oven off & partially open door; leave cheesecake in over 1 hour. Cool on wire rack; cover & chill at least 8 hours. Serve with warm Italian tomato sauce
