2 lbs frozen cubed hash browns, thawed
16 oz sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
1 large sweet onion, finely chopped (I’ve used leeks as well)
16 oz shredded cheddar
Salt & pepper to taste

Mix well. Place in greased casserole dish.
Bake 350˚ for 30-45 minutes until bubbly.
