1 uncooked pie crust
2 1/2 cups cut rhubarb
1 cup sugar ( or a little more if want sweeter)
4 tbsp flour
6 tbsp milk
2 eggs ( 2 yolks and 1 with white)

Directions:
Directions:
Preheat oven to 350º. Line pie dish with uncooked crust. Place rhubarb into the pie shell. Make custard with remaining ingredients and pour over rhubarb. Bake at 350º for 30 minutes. Top with meringue if desired.
