2 lbs ground beef
1 bunch of fresh parsley or cilantro (cilantro adds spice)
1 cup quick oatmeal
2 eggs
1 onion
1 tsp garlic
1 tsp oregano
1 tsp basil
1 tsp fennel seed
1 tsp salt
1 tsp ground black pepper

1 large mixing bowl
1 small cereal bowl
1 cutting board
1 knife
1 cookie sheet or 13x9 pan

Directions:

Preheat oven to 350º.

1. Peel and chop onion as fine as possible.
2. Beat eggs in a small bowl
3. Separate leaves from stalk of parsley or cilantro and chop the leaves fine.
4. In a large bowl put the meat. Add all the ingredients and mix by hand till well mixed.
5. Shape meat into 3" balls and place onto cookie sheet. They can be close together but not touching.
6. Bake in oven for 30 minutes or more, the inside of a meatball should not be pink.

Serve with egg noodles or boiled potatoes! Great the next day cut in half for sandwiches. My son makes these for himself and they last several days.
