2 c. butter
2 1/2 c. sugar
1 1/2 c. whole unblanched almonds
1 1/2 c. semisweet chocolate chips, melted and divided
1 1/2 c. chopped blanched almonds, lightly toasted and divided

Yield: 3 1/4 pounds
Melt butter over low heat in a 3 qt. heavy saucepan. Add sugar. Cook, stirring constantly, over high heat until mixture comes to a boil (about 6 minutes). Reduce heat to medium-high and cook and stir for 5 minutes. Add whole almonds; cook 7 minutes, stirring constantly. Reduce heat to medium; cook until mixture reaches hard crack stage or a candy thermometer registers 300º (about 10 minutes), stirring occasionally. Pour mixture into a buttered (15 X 10-inch) jellyroll pan. Cool until firm. Spread half of melted chocolate over toffee layer. Sprinkle with half of chopped almonds. Press almonds gently into chocolate. Turn candy out onto a wax paper-lined baking sheet; spread remaining chocolate over other side. Sprinkle with remaining chopped almonds; press into chocolate. Chill until firm. Break candy into pieces. Store between layers of wax paper in airtight containers.

Alternate: Spread 6 oz. pecans in jelly roll pan. Break 10 (3/4 oz.) milk chocolate bars in pieces; set aside. Cook 4 sticks butter with 2 c. sugar and 1/4 c. water, stirring constantly until mixture reaches 300º. Spread over nuts. Sprinkle chocolate on top. Spread chocolate over top. Cool and break into pieces.
