Knott’s Berry Farm Meatloaf (to half recipe – brackets)
In a medium Ziploc combine:
½ cup diced onion (1/4 cup)
½ cup shredded carrot (1/4 cup)
¼ cup ketchup (2 tbsp)
1 cup Ritz cracker crumbs (1/2 cup)
3 eggs (1 ½ eggs)
¼ cup Worcestershire sauce (2 tbsp)

In another medium Ziploc bag combine:
½ cup ketchup (1/4 cup)
½ cup mustard (1/4 cup)
1/3 cup brown sugar (3 tbsp)

Medium Ziploc bag:
1 lb Ground beef (half)
1 lb Ground pork sausage (half)

Put all Ziplocs in a large Ziploc bag and freeze.

Preheat oven to 350F

In a large bowl add the Ziploc of meat, the onions and carrot mixture, and mix well to combine. Shape meat mixture into two loaves and place in a greased roaster.

Massage the sauce mixture and cover meatloaf with half of the sauce mixture.

Bake covered for 1 hour. After 1 hour, slice loaves partly through and spoon remaining sauce over the top of the loaves and in between the slices. Bake covered for another ½ hour.
