2 c. cubed ham
2 c. water
1 c. cider vinegar
1 T. sugar
1 large onion, sliced into rings or chopped
1 T. whole mixed pickling spice
1 tsp. salt

Directions:
Directions:
Yield: 1 quart
Put pickling spice in a small cheesecloth bag and tie shut. Place all ingredients, except ham, in a sauce pan. Bring to boil, then add cubed ham. Cover and simmer for 20 minutes. Remove spice bag cover and chill before serving.

Variation: Combine 1 c. vinegar and 1 c. water. Add 1 T. pickling spice, if desired. (I don't.) Add 1 sliced onion and 1 c. cubed ham, stirring to coat. Refrigerate several hours, stirring occasionally. Store in pint jar in the refrigerator.
