2 c. white sauce
2 c. ham, diced
6 hard-cooked eggs, diced
1 c. mushrooms, optional
1 T. green pepper, chopped, optional

Oven: 350º
Dice ham and hard-cooked eggs into a greased (9 X 13-inch) casserole dish. Make white sauce by mixing 1/4 c. flour with 1/4 c. melted butter and stirring into 2 c. warm milk. Heat in microwave 1 to 2 minutes, stirring every 30 seconds until thick. Pour over ham and eggs; season lightly with salt and pepper. Bake about 30 minutes, or until bubbly. Serve over corn muffins or toast with fresh fruit. This is a good use for leftover ham and is one of Steve's favorites.
