1/2 cup olive oil 1 to 2 tbsp. extra if needed
4-6 large Portobello mushrooms
Kosher salt
Fresh ground black pepper
1 pd. baby spinach cleaned and dried
4 Tbsp. chopped garlic
1/4 tsp. ground nutmeg
4 ounces of fresh mozzarella
1/4 cup grated Parmesan cheese

Preheat broiler line a baking sheet with foil spray with Pam.
Wipe mushrooms clean discard stems. Scoop out and discard the tough inside centers where steams where attached. Brush mushrooms both side with oil grill side up on baking sheet. Season with salt and pepper broil about 5 minutes, turn and broil another 3-5 minutes.
For the stuffing heat 1/4 cup oil in large skillet, add the spinach a hand full at time till it all wilts down. Add garlic 1 tsp. salt and nutmeg stir and cook 1 minute more. Remove spinach (do not clean pan yet) to a large strainer press down to get the liquid out.
Mix spinach and cheese spoon onto the mushrooms bake at 350 for another 15 minutes
