3/4 c. scalded milk
1/4 c. sugar
3 T. shortening
1 t. salt
1/4 c. luke warm water
1 pkg. yeast
1 egg slightly beaten
3 1/2 c. sifted flour

Directions:
Directions:
Pour milk over sugar, shortening and salt in mixing bowl. Cool to lukewarm. Soften yeast in lukewarm water, add egg and mix well and add to milk mixture. Add about half of the flour; beat thoroughly; add remaining flour and mix well.
Place dough in a greased bowl, cover and let rise in a warm place for about an hour or until doubled in bulk. Punch down and grease dough slightly and cover bowl with wax paper greased on one side, to keep dough from sticking to it. Secure with plastic wrap securely and place in refrigerator until needed. About 2 hours before baking, take from refrig. and shape into your favorite rolls. Grease tops with melted butter and place in greased pan, cover and let rise until double in bulk; (about 2 hours but it depends on the temperature. In the summer it may only take an hour) Bake in hot oven 425º
for 12 to 20 minutes depending on the size. Makes 1 1/2 to 2 dozen rolls
Note: I use butter as my shortening.
