1 lb. fresh beets: boiled, skinned, cooled, sliced and quartered
6 tbsp. olive oil
3 tbsp. red wine vinegar
Salt
Pepper (lots and lots of pepper)
1 small onion coarsely chopped
1/2 tsp. Anise seeds, crushed

Directions:

Stir onion and anise into vinegar and oil then gently stir in beets.
Refrigerate over night or at least for several hours.
