Potato Roses Recipe

4 lbs baking potatoes
4 T. butter
1 T. minced onion
1 T. minced parsley
2 T. grated parmesan or romano cheese
1/2 c. melted butter
1/2 t. paprika
1 1/2 t. salt
1/8 t. pepper
1 egg, unbeaten

Directions:
Directions:
Peel potatoes, cut in halves and cook in boiling lightly salted water til tender. Mash slightly. Place potatoes in large bowl of mixer, beat til light and fluffy. Add 4 T. butter, onion, salt, pepper, parsley, cheese and egg. Whip til well mixed. Cool. Moisten hands; shape potato mixture into balls, about 3/4 c. each. Place on greased cookie sheet; flatten slightly on bottom.
To form roses, dip forefinger in water, make an indentation in center of potato ball. Swirl finger clockwise to make a spiral. Can be chilled overnight. Before baking sprinkle with paprika and drizzle 1/2 c. melted butter over roses. Bake at 450º for 8 min. Let stand a few minutes before serving.
Instead of making the roses, you can just put this into a casserole & bake.
