2 lbs sliced carrots
1/2 c. mayo.
2 T. chopped onion
2 T. horseradish
1/4 t. salt
dash pepper
1/4 c. crushed saltines
2 T. melted butter

Directions:
Directions:
Cook carrots til tender. Place in casserole. Combine mayo, onion, horseradish, salt and pepper. Spoon over carrots. Mix saltines and butter, spread on top of casserole. Bake at 350º for 30 min. Add water chestnuts before topping, if desired.
