"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Sprinkle yeast into warm water in a large bowl. Scald milk; add 1/2 c. butter and salt, cool to lukewarm. Meanwhile combine eggs and sugar and beat until light. Add milk mixture to eggs and stir into yeast mixture. Gradually beat in 3 c. flour with wooden spoon. Stir in enough additional flour to make a soft dough that leaves sides of bowl. Turn dough out onto floured surface; kneed, adding additional flour as necessary, 8 - 10 min. or until smooth and elastic. Put in greased bowl, turning to grease top. Cover with plastic wrap and let rise in warm place until doubled in bulk 1 1/2 - 2 hours. Punch down, let rest 10 min. Divide dough into thirds and shape each into a smooth ball. With hands, flatten to 8" to 9" diameter rounds. Press into 3 greased 9" cake pans. Cover and let rise 1 hour or until doubled in bulk. Bake at 350 for 30 min or until well browned and done. Gibson developed horrific allergies growing up. . . which benefitted the rest of us in that Mom started making bread for him/us from scratch. This was one of our favorites!
