2 c. yellow corn meal
1 c. flour
6 t. baking powder
1 t. salt
1 t. sugar
3 eggs, well beaten
1/2 c. wesson oil
1 #2 can cream style corn
1 large onion chopped fine
8 large jalapeņo peppers, seeded and finely chopped (substitute 1 4oz can chopped chili peppers)
1 1/2 c. grated sharp cheddar cheese

Mix in order given - fold in cheese. Bake in lightly greased 9x13 pan at 350 til lightly browned. Cut into squares and serve hot.
