1 28 oz can of whole tomatoes
2 10 oz cans of Ro-tel tomatoes
1/2 cup of diced onion
1 garlic clove chopped
1 jalapeņo pepper chopped
1/4 teaspoon of salt
1/4 teaspoon of sugar
1/4 teaspoon of cumin
3/4 cup of cilantro
Juice of 1 small lime (or 1/2 large lime)

In a blender or large food processor, put all the ingredients and pulse 15-20 times.

Don't be afraid of the jalapeņo...

For mild salsa, simply remove the seeds from the pepper (the seeds contain the heat) and use only the flesh.

For hot salsa, use the whole jalapeņo (seeds and all)-- Muy Caliente!

One of my favorite snacks is chips and salsa! If you are tired of that jar salsa and want to impress the guests at your next gathering, whip up some of this easy, AUTHENTIC salsa! Serve alongside tortilla chips topped with melted cheese or even put it atop of an omelet! Just refrain from slapping your mama!
