2 large onions
1 C bell pepper
2 stalks celery
File' to taste
1 small bottle chicken bouillon cubes
1 Hen, dressed
1/2 C green onion tops
1/2 C parsley
5 lb sausage
1 C cooking oil
1 C all purpose flour
3 lbs sausage

Directions:
Directions:
Chop vegetables.
Cut up hen & season generously Fry in small bit of oil in heavy pot over medium heat until golden brown. Pour excess oil out of pot & save for your roux. Add sausage, chopped onions, celery, and bell peppers to chicken and cook slowly uncovered until soft.

Make roux:
Heat oil in heavy pot over medium heat. When oil is hot, gradually add flour. Lower heat. Stir constantly. After flour is combined with oil, turn fire very low and cook until golden brown, stirring constantly. Remember roux will continue cooking, so stir or put into another heat proof container until ready to use.

Dissolve roux in 1-1/2 gallons warm water. Add garlic. Then add roux and chicken. Boil slowly in uncovered pot until chicken is tender. Remove from heat & add parsley and onion tops
