Beef Stroganoff Recipe

1 - 1 1/2 lbs round steak cut into thin strips or sirloin tips, marinated in Meat Marinade (optional, but makes a big difference in the flavor)
2 tbsp. butter or olive oil
1 1/2 cups beef broth
2 tbsp. catsup
1 clove of garlic, finely chopped
1 tsp. salt
1 tsp. pepper
8 ounces of mushrooms, sliced
1 medium onion, chopped
3 tbsp. of flour or cornstarch
1 cup sour cream
3 or 4 cups of egg noodles or rice
1 tbsp. butter
1 tsp. poppy seeds

1. If desired, marinate beef in a McCormick's or Adolph Meat Marinade package, follow package directions. If you use the marinade, omit the salt and pepper and taste for salt and pepper at the end of cooking before adding sour cream. Marinate for up to 8 hours (I would put the meat in to marinate before going to work in the morning and cook the stroganoff for supper)

2. Brown the beef strips in the olive oil, about 10 minutes. Do not crowd the pan, brown in 3 - 4 batches. Add onions, cook until just starting to be translucent, add garlic, cook 2 minutes more. Return all the meat to the skillet.

3. Reserve 1/3 cup of beef broth. Add remaining beef broth, catsup and salt and pepper (if not marinated) to skillet. Cover and simmer for 40 minutes or until tender (about 20 minutes if meat was marinated all day).

4. Add mushrooms and cook covered for 5-10 additional minutes. While mushrooms cook, mix reserved broth and flour or cornstarch. Stir into the beef mixture, raise the heat and bring to a boil. Boil for about 1 minute until sauce gets very thick. Take off the flame and turn the heat down. Stir in the sour cream quickly and reheat gently until just warmed through. Too much heat at this point will curdle the sour cream.

5. Serve immediately over noodles or rice that has been mixed with the poppy seeds and butter.

It's getting harder and harder to find the meat marinade, but the meat tenderizer and the peppercorns in the marinade really improve the flavor of the stroganoff, making it a little peppery with smooth sour cream.

Obviously our family likes beef stroganoff and pot roast, maybe we just like things simmered for a long time?!
