portobello mushrooms
yellow squash (sliced into half moons)
onion (chopped)
bell pepper (chopped)
spinach
provolone cheese slices
bread crumbs
shredded cheese

Directions:
Directions:
Rinse and pat dry your portobello mushrooms. In a skillet with oil, sautee your chopped onion, bell pepper, corn, and squash. Sautee until the vegetables are tender. Add a few handfuls of spinach and wilt. Remove the veggie mixture from heat and stir in shredded cheese.

Place the mushrooms rib side up on a baking sheet. Place a slice of provolone cheese on top of each mushroom. Divide you veggie mixture evenly onto each mushroom. Top each mushroom with about a tablespoon of bread crumbs. Add more bread crumbs if desired.

Bake in a 350º oven for 15-20 minutes.
