8 cucumbers (18 cups)
1/3 c. salt
4 medium sweet onions
1 1/2 pt white vinegar
3 c. sugar
1 Tbsp mustard seed
1 tsp celery seed
1 tsp turmeric
Cornstarch, to thicken

Directions:
Directions:
1. Slice cucumbers about 1/8" thick and slice onions, place in large bowl and sprinkle with salt.
2. Let stand overnight, then drain thoroughly.
3. Put onions and cucumbers in large stock pot, pour in vinegar.
4. Simmer on low heat for 20 mins.
5. Add sugar, and continue to simmer until the sugar dissolves, STIRRING CONSTANTLY.
6. In a small bowl, mix 4 Tbsp cornstarch with mustard seed, celery seed, and turmeric. Add enough water to make a thin paste.
7. Add to stock pot, STIRRING CONSTANTLY until mixture thickens.
8. Pour in to 3 sterilized pint jars and seal.

*Grandma Martha once traveled all the way to Winnipeg for cornstarch for this recipe.
**We use ripe cucumbers, rind and all. I started chopping the cucumbers and onions in a food processor because it saves time on preparation.
