3-4 lb pork rib rack
2 tbsp. sugar
1 tbsp. kosher salt
1 tbsp. ground black pepper
1 tbsp. paprika

NOTE: Doubling amounts for two racks works but I find two tbsp. pepper too much for Cindy's tastes.

Get the smoker going.
1. Pat rack dry
2. Mix all dry ingredients and rub mix onto the rack. Cover as uniformly as possible and into all the creases.
3. Place rack "bone side" up in the smoker.
4. Smoke low and slow for 6 to 8 hours at between 180º and 225º.
5. Flip rack over about half way through.

This recipe usually start about 6 AM and they are done by supper time. I particularly enjoy using the smoker when it is cool outside, it is the perfect fall Saturday activity. My wonderful wife can eat a rack by herself. Allowing the rack to cool to room temperature after smoking works, but reheating in the oven doesn't.
Editor's Note: Serve your favorite barbecue sauce on the side for dipping, but these ribs don't have to have sauce.
