2 lbs. potatoes
1 Tbsp. or more diced onion
1 1/2 t. Salt
1/2 t. Paprika
Dash of white pepper
1/2 t. Salt
1 Tbsp. Sugar
1/4 C. Vinegar
1/2 C. Oil
3 hard boiled eggs, diced
2 Tbsp. Parsley
1/2 C. Celery, diced
1/2 C. Mayonaise

Directions:
Directions:
Cook potatoes unpeeled. Remove skins while still hot. Let cool and dice.

Add onion, salt, paprika, and pepper. COmbine salt, venegar, sugar, and oil. Pour over potato mixture and let it marinate. When ready to serve, add eggs, parsley, celery, and mayonaise.

**The flavors really develop the longer it sits. Make the night before if possible.
