1/3 cup shredded Italian Cheese Blend (Romano/Parmesan)
¼ cup dry breadcrumbs
1 tsp. dried basil leaves
¼ tsp. paprika
salt & freshly ground black pepper
1lb - 1.5lb boneless skinless chicken breast halves
½ cup plain nonfat Greek-style yogurt

1lb. sliced fresh mushrooms
1 onion, finely chopped
½ cup chicken broth
2 cloves garlic, minced
½ tsp. dried thyme leaves
½ cup Italian Shredded Cheese (pre-shredded Italian blend works)
Dried Italian seasoning
3 cups hot cooked couscous

Directions:

CHEESE mixture: combine first 6 ingredients
DIP chicken in yogurt, then in cheese mixture, turning to evenly coat both sides of each breast.
COOK in olive oil on medium heat 5 to 7 min. on each side or until done.
SEPARATE Skillet heat oil & add mushrooms and onions; cook 10 min., stirring occasionally. Add broth, garlic and thyme; stir. Cook 5 min.; stir in cheese.
TOP chicken with mushroom mixture and a dash of dried Italian seasoning. Serve over couscous.
