1 c. raisins
1 1/2 c. water
1 tsp. sugar
1 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs, well beaten
1 tsp. vanilla
1 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 c. quick (instant) oatmeal

Directions:

Preheat oven to 350º

1. Boil together on low heat the raisins, water and 1 tsp. sugar. Remove from heat and let cool.

2. Beat shortening, sugar, brown sugar, eggs and vanilla until creamy.

3. Mix in flour, salt, baking soda, cinnamon, oatmeal and drained raisins.

4. Spray cookie sheet with cooking spray.

5. Bake for 10 to 12 minutes.
