4 (4 oz.) cubed steaks
38 saltines (crushed), about 1 sleeve
1 1/4 c. all purpose flour, divided
2 tsp. salt, divided
1 1/2 tsp. black pepper, divided
1/2 tsp. ground red pepper
1/2 tsp. baking powder
4 3/4 c. milk, divided
2 large eggs
1 c. peanut or vegetable oil

Sprinkle steaks 1/4 tsp. salt and pepper. Set aside. Combine crackers, 1 c. flour, 1 tsp. salt, 1/2 tsp. each: baking powder, black and red pepper. Whisk together 3/4 c. milk and eggs. Dredge steaks in cracker mixture, dip in milk mixture; dredge again in cracker mixture. Heat oil in a 12 inch skillet to 360º. (Do not use a non-stick skillet.) Fry steaks 2 to 3 minutes. Turn; fry 2-3 minutes longer. Remove steaks to a wire rack in a jelly roll pan. Warm in a 225º oven. Drain oil, reserving cooked bits and 1 T. drippings in skillet. Whisk together remaining 4 c. milk, 1/4 c. flour, 1 tsp. salt, and 1 tsp. pepper. Add to drippings in skillet; cook, whisking constantly, 10-12 minutes or until thickened. Serve over steaks.
