• 4 cups cake flour
• 4 tsp. baking powder
• ½ tsp. salt
• 1 cup shortening
• 2 ½ cups sugar
• 1 cup milk
• 10 egg yolks
• 1 tsp. almond extract

Directions:

Sift flour, baking powder, and salt together. Cream shortening with sugar until fluffy. Add sifted dry ingredients and milk alternately in small amounts, beating well after addition.

In a separate bowl, beat egg whites until stiff but not dry. Fold in egg whites and almond extract, pour into a greased large shallow pan and bake in a moderate oven (350 degrees) for 25 to 30 minutes. Cool. Cut cake into oblongs, squares, circles diamonds, crescents or any desired shape.

Variations and serving suggestions
• Spread top and sides with butter frosting.
• Color some of the frosting and decorate the cakes using different tips of the pastry tube.
• Fill hollows with jam.
• Press chopped nuts, grated or shaved chocolate or toasted coconut into ides of frosted cakes.
• Often rounds are cut with centers cut from half of rounds so the hollowed round may be placed on top of a whole round and the hole filled. The entire pastry is then frosted and decorated.
