1 (4-5lb) boneless sirloin tip roast cut into 1" cubes
3/4 cup burgundy (or other dry red) wine
1 cup beef broth
2-(10 3/4 oz) cans Cream of Mushroom soup
1-(2.5oz) package of dry onion soup mix
3/4 lb fresh mushrooms
1 cup chopped green pepper
1 lb pearl onions (blanched and peeled)
1 tbsp chopped garlic
10 cherry tomatoes (optional)
Fresh Parsley Sprigs
Hot cooked rice

Place beef in a 5 quart casserole dish. combine wine, water, soup, and soup mix, stir well, and pour over beef. Stir in mushrooms, green pepper, onions, and garlic. Cover and bake at 350º for 3 hours, stirring occasionally. Stir is cherry tomatoes, if desired. Garnish with parsley sprigs. Serve over hot rice.

May add a little cornstarch or flour to thicken the sauce. May also want to use a little larger dish to bake in, it does create liquid and becomes quite full.
